Es krim adalah buih setengah beku yang mengandung lemak teremulsi dan udara. Sel-sel udara yang ada berperanan untuk memberikan texture lembut pada es krim tersebut. Tanpa adanya udara, emulsi beku tersebut akan menjadi terlalu dingin dan terlalu berlemak.

Bahan utama dari es krim adalah lemak (susu), gula, padatan non-lemak dari susu (termasuk laktosa) dan air. Sebagai tambahan, pada produk komersil diberi emulsifier, stabiliser, pewarna, dan perasa. Sebagai emulsifier biasanya digunakan lesitin, gliserol monostearat atau yang lainnya. Emulsifier ini berguna untuk membangun distribusi struktur lemak dan udara yang menentukan dalam membentuk sifat rasa/tekstur halus dan pelelehan yang baik. Untuk stabilisernya bisa digunakan polisakarida dan ini berfungsi sebagai penambah viskositas. Sedangkan pewarna dan perasa bisanya bervariasi tergantung pada selera pasar. Jika ingin diberi rasa strawberry tentunya diberi perasa strawberry dan pewarna merah. Ingat, pewarna yang diberikan tentunya harus pewarna makanan bukan pewarna tekstil lho.

Pada saat yang sama udara dimasukkan dengan cara dikocok. Tujuan dari pembekuan dan aerasi ini adalah pembentukan buih yang stabil melalui destabilisasi parsial dari emulsi. Pengocokan tanpa pendinginan tidak akan memberikan buih yang stabil. Jika buih terlalu sedikit produknya akan tampak basah, keras dan sangat dingin. Sedang jika buihnya terlalu banyak maka produknya akan tampak kering. Sel-sel udara pada es krim harus berukuran sekitar 100 mikron. Es krim mempunyai struktur koloid yang kompleks karena merupakan buih dan juga emulsi. Buih padat terjadi karena adanya lemak teremulsi dan juga karena adanya kerangka dari kristal-kristal es yang kecil dan terdispersi didalam larutan makromolekular berair yang telah diberi gula. Peranan emulsifier (misalnya: gliserol monostearat komersial) adalah untuk membantu stabilisasi terkontrol dari emulsi didalam freezer. Perubahan-perubahan polimorfis lemak pada es krim selama penyimpanan menyebabkan perubahan bentuk pada globula awalnya, yang berkombinasi dengan film protein yang agak lepas, menyebabkan terjadinya penggumpalan di dalam freezer. Stabilisasi gelembung-gelembung udara pada es krim juga terjadi karena adanya kristal-kristal es dan fasa cair yang sangat kental. LONDON - Unidentified Flying Object (UFO) masih saja membuat penasaran masyarakat dunia. Kali ini UFO menggegerkan warga di wilayah Cambridgeshire, Inggris.

Sebanyak 50 benda terbang dengan warna yang cukup terang melintasi wilayah tersebut. Tak hanya satu orang saja yang melihat benda terbang tersebut, tapi hampir semua warga masyarakat mengaku melihat benda misteri itu.

Scot Boswell, seorang saksi mata mengatakan melihat benda-benda itu melintas pada pukul 11.30 malam, dan bahkan dirinya sempat mengabadikan gambar tersebut dengan kamera. Demikian dilansir Telegraph, Kamis (4/6/2009).

"Saya memang hanya melihat tiga benda bercahaya saat melintasi rumah saya, dan saya juga melihat beberapa benda yang sama dengan jarak sekitar satu kilometer, saya tak tahu jumlah pastinya," ujarnya.

Scot mengungkapkan, pada awalnya ia mengira bahwa benda tersebut merupakan pesawat terbang, tapi yang ia kagetkan adalah benda-benda tersebut tak bersuara sama sekali.

Tak jauh berbeda dengan Scot, Auberon dan Suzi Hedgecoe mengatakan melihat sekira 50 benda berwarna oranye di langit. "Benda itu seperti armada yang tak bersuara dan hanya terlihat selama enam menit," kata Hedgecoe.

Menurut keduanya, benda-benda tersebut melayang di atas ketinggian sekira 3000 kaki.

Di Inggris, masyarakat seringkali dikejutkan dengan kabar-kabar tentang UFO bahkan Kementerian Pertahanan Inggris perlu mengeluarkan data tentang jumlah 'kunjungan' UFO ke Inggris.

LONDON - Rata-rata wanita menyukai berbagai benda berwarna pink. Warna ini pun memang kerap didentikkan dengan warna feminim. Contohnya para orangtua biasanya membeli segala perlengkapan berwarna pink jika bayi mereka perempuan, sebaliknya jika laki-laki biasanya akan dibelikan benda-benda berwarna biru.

Rupanya ada jawaban ilmiah mengenai hal ini. Dr Anya Hulbert dari University of Newcastle mengatakan jika wanita diberikan beragam pilihan warna, secara alamiah mereka akan lebih memilih warna-warna yang lebih mendekati warna merah.

Bakat alami ini membuat wanita memiliki kemampuan memilih buah-buahan matang lebih baik dibandingkan pria, demikian keterangan yang dikutip dari BBC, Rabu (13/5/2009).

Dalam studinya, Hulbert melibatkan 200 pria dan wanita berusia 20an tahun, dan meminta mereka memilih beragam warna yang ditampilkan pada layar komputer.

Dari hasil studi ini ditemukan bahwa mayoritas wanita sangat suka dengan paduan warna biru dan merah, serta kurang menyukai warna hijau dan kuning. Para wanita itu berasal dari dua jenis ras yang berbeda, yaitu Inggris dan China. Namun rupanya, selera warna sama sekali tidak dipengaruhi budaya etnis, melainkan karena faktor biologi.

"Evolusi mengakibatkan wanita menyukai warna kemerahan. Rata-rata mereka cenderung memilih buah dan benda-benda berwarna kemerahan. Kebiasaan ini juga nampaknya dipengaruhi oleh faktor budaya," kata Hulbert.

"Bisa jadi ini akibat peran kaum perempuan sejak dulu yang sering memilih bahan pangan untuk keluarga. Kebiasaan turun temurun untuk mencari buah matang yang identik dengan warna merah, menyebabkan sampai saat ini ?anak cucu? Hawa itu meyukai warna merah atau kemerahan," tambahnya.

Sementara itu, hasil berbeda ditemukan pada kelompok pria. Mereka cenderung menyukai warna biru sebab memang tugas mereka sejak lama adalah mencari sumber air bagi keluarga atau sukunya. Warna biru identik dengan sumber air yang baik, bisa dikonsumsi.

PARIS - Para ahli kesehatan di Prancis telah memperingatkan akan risiko mabuk yang diakibatkan oleh kandungan kafein dalam permen karet.

Peringatan ini muncul setelah dokter menemukan kasus seorang bocah laki-laki menjadi murung dan tak bernergi karena pengaruh kafein yang berlebihan dalam permen karet. Orangtua si bocah pun segera melarikannya ke unit gawat darurat Rumah Sakit Naples' Monaldi.

Anak laki-laki itu juga mengeluhkan rasa sakit pada bagian perut, terus menerus ingin buang air kecil, dan merasakan nyeri pada lengan. Menurut keterangan dokter, anak ini mengalami kesulitan bernapas, tekanan darah yang tinggi, serta detak jantung yang sangat cepat hingga 147 kali per menit.

Setelah dokter melakukan analisa yang seksama, diketahui penyakit yang menyerang bocah ini diakibatkan oleh mengunyah permen karet tinggi kafein, demikian keterangan yang dikutip dari AFP, Jumat (29/5/2009).

"Pasien kami mengakui sebelum merasakan sakit, dia mengonsumsi dua pak permen karet yang mengandung 320 miligram kafein selama empat jam," kata salah satu dokter yang menangani kasus ini.

"Bagi bocah dengan berat badan sebesar 45 kilogram, konsumsi permen karet berkafein ini setara dengan 10 cangkir teh dalam tubuh orang dewasa seberat 70 kilogram," tambahnya.

Permen karet itu juga mengandung zat guarana, pemanis buatan dan bahan-bahan lainnya. Namun bahan-bahan ini masih aman selama dikonsumsi dalam jumlah rendah.

Untuk itu ada baiknya mengawasi anak-anak dalam mengkonsumsi permen karet berkafein. Anak-anak sangat sensitif terhadap kafein karena berat badan mereka sangat rentan didominasi oleh kandungan kopi dan teh.

WASHINGTON - Untuk pertamakalinya ilmuwan melakukan analisa secara global mengenai kesehatan dan produktivitas tumbuhan laut dengan menggunakan sinyal unik yang dideteksi Satelit Aqua milik NASA.

Dengan memanfaatkan teknologi Moderate Resolution Imaging Spectroradiometer (MODIS) pada Satelit Aqua milik NASA, ilmuwan kini dapat mengamati pijaran cahaya merah dari phytoplankton yang nampak pada permukaan laut. MODIS merupakan perangkat pertama yang bisa mengamati sinyal cahaya merah ini dalam skala global.

Hal ini memudahkan peneliti melakukan riset kelautan dari jarak jauh dengan mengukur banyaknya pijaran cahaya merah yang dipancarkan phytoplankton. Mereka bisa menaksir seberapa efisien tumbuhan mikroskopik ini mengubah cahaya matahari menjadi bahan makanan melalui proses fotosintesis.

People's Daily Online, Jumat (29/5/2009) melansir, Phytoplankton bersel satu yang memenuhi ekosistem laut, merupakan sumber makanan dasar bagi hewan laut. Tumbuhan ini menguasai setengah dari aktivitas fotosintesis di bumi dan memainkan peranan penting dalam keseimbangan karbondioksida dalam atmosfer bumi.

Oleh karenanya jika phytoplankton dapat tumbuh dengan subur dan sehat, hal ini akan mempengaruhi jumlah karbondioksida yang dapat diserap dari atmosfer. Dengan begitu, semakin jelas bahwa laut tak kalah penting peranannya dalam isu perubahan cuaca.

"Teknik yang memanfaatkan satelit ini merupakan metode pertama yang bisa mengukur tingkat kesehatan dan produktivitas phytoplankton di dalam lautan," kata Michael Behrenfeld, ahli biologi dari Oregon State University.

"Beruntung kita memiliki perangkat baru yang sangat penting untuk memantau perkembangan phytoplankton di seluruh dunia, setiap pekannya," tambahnya.

Sebelumnya, ilmuwan menggunakan sensor satelit untuk melacak jumlah tanaman yang hidup di dasar laut dengan mengukur jumlah dan distribusi kadar klorofil atau zat hijau daun.

LONDON - Para ilmuwan dari Royal Meterological Society (RMS)menemukan jenis awan yang unik. Awan ini kemudian diklaim menjadi variasi awan baru yang teridentifikasi dalam abad ini.

RMS kini tengah berupaya menyelidiki lebih jauh tentang awan yang diberi nama Asperatus ini. Mereka tengah mengupayakan agar Asperatus bisa secara resmi masuk ke dalam daftar istilah internasional yang bisa digunakan dalam pengidentifikasian awan. Jika berhasil, ini adalah pertamakalinya variasi awan diklasifikasikan sejak 1953, demikian keterangan yang dikutip dari BBC, Rabu (3/6/2009).

Jenis awan baru ini berbentuk awan gelap yang bergulung-gulung di angkasa dan sudah sering ditemukan di berbagai lokasi di seluruh dunia.

"Jika dilihat dari bawah, awan ini sedikit terlihat seperti riak-riak ombak kecil yang terputus-putus," kata Gavin Pretor-Pinney, pendiri Cloud Appreciation Society, sekaligus penemu Asperatus.

"Kami mencoba mengidentifikasi dan mengklasifikasikan setiap foto awan yang kami temukan. Ketika melihat Asperatus, kami melihat ada ciri-ciri khusus yang belum pernah kami temukan dalam kategori awan sebelumnya. Oleh karenanya pada saat itu saya mulai berpikir bahwa kemungkinan besar ini adalah jenis awan baru," terang Gavin.

Lebih lanjut Gavin menjelaskan, diberi nama Asperatus karena permukaan bawah Asperatus terlihat kasar dan berombak. Asperatus berasal dari bahasa latin yang artinya kasar.

"Asperatus nampak terlihat dalam kumpulan badai angin yang besar. Namun beberapa laporan menyebutkan bahwa awan ini cenderung terpecah tanpa membentuk badai terlebih dahulu," kata Gavin.

RMS kini tengah mengumpulkan informasi lebih rinci mengenai data cuaca dan lokasi Asperatus ditemukan untuk memahami olebih tepat apa yang menyebabkan terbentuknya awan Asperatus.

Dalam ilmu telaah awan, terdapat sepuluh bentuk dasar awan yang diklasifikasikan dalam istilah genus. Setiap genus menggambarkan dimana awan-awan tersebut terbentuk, intensitas kemunculan mereka, termasuk klasifikasi mengenai awan stratus, cumulus dan cirrus.

Genre ini kemudian dibagi kedalam dua spesies awan yang menggambarkan struktur internal dan bentuk dan variasi awan yang menggambarkan transparansi dan penyusunan awan.

SAN FRANSISCO - Seakan tidak mau tertinggal dari para pesaingnya, Intel kembali menggelontorkan chip yang didedikasikan bagi laptop yang sangat tipis dan kecil.

Kehadiran Asus membuka kategori baru dalam industri komputer dunia. Setelah vendor asal Taiwan itu menggelontorkan Eee PC-nya, berturut-turut seluruh vendor komputer menyatakan komitmennya untuk bergerak di pasar laptop supermini dan tipis. Terakhir, ada Macbook Air dan Dell Adamo, yang mengklaim telah menggelontorkan laptop 'super duper tipis'.

Fenomena perusahaan komputer yang 'menceburkan' diri ke dalam pasar ini dianggap sebagai lahan yang cukup menggiurkan bagi Intel. Maka dari itu, hadirlah sebuah prosesor baru bernama Pentium SU2700.

Kehadiran prosesor baru Intel ini disambut baik oleh para koleganya. Acer dan Asus misalnya. Kedua perusahaan berkomitmen akan mengembangkan laptop tipis yang dipersenjatai dengan prosesor ini. Bahkan Microsoft mengaku akan memastikan seluruh software buatannya mendukung prosesor Pentium SU2700 ini.

SEATTLE - Microsoft telah memastikan sistem operasi pengganti Windows Vista, yang diberi nama Windows 7 akan segera dirilis pada 22 Oktober mendatang.

Sebenarnya Windows 7 direncanakan akan dirilis awal tahun depan, namun bulan lalu Microsoft mengkonfirmasikan bahwa produk ini akan mengebrak pasaran jika bisa dirilis secepatnya.

Reuters, Rabu (3/6/2009) melansir, kehadiran sistem operasi ini merupakan peristiwa besar bagi dunia komputer. Sudah bukan rahasia lagi jika 90 persen pengguna komputer di dunia menggunakan Windows sebagai sistem operasi komputer mereka.

Hal ini tentu menjadi strategi penting bagi Microsoft. Maklum saja, setengah keuntungan yang ditangguk oleh raksasa teknologi komputer ini berasal dari pemasaran unit operating system.

Perilisan Windows 7 ini juga merupakan bagian dari upaya memenangkan kembali kepercayaan publik setelah sebelumnya Windows Vista kurang laku di pasaran sejak peluncurannya di tahun 2007 lalu.

Vista dinilai gagal memenuhi kebutuhan para pengguna komputer karena tidak kompatibel dengan beberapa perangkat bertenaga rendah dan dirasa terlalu sulit untuk dioperasikan.

Microsoft mengatakan sebagai upaya pengenalan Windows 7 ke publik, pihaknya akan menawarkan kode Windows 7 agar bisa dijalankan dalam perangkat komputer baru.

Sehingga setelah peluncurannya nanti, konsumen akan bisa membeli perangkat komputer baru dengan Windows 7 yang telah terinstal di dalamnya. Atau konsumen juga bisa menginstal piranti lunak yang baru pada komputer lama mereka.

Microsoft berjanji akan memberi jaminan garansi teknis, kepada semua konsumen yang mengupdate versi Windows XP maupun Vista ke Windows 7.

Namun hingga kini pihak Microsoft belum memberi keterangan lebih lanjut mengenai kisaran harga sistem operasi terbarunya tersebut.
